These 9 chapters and 22 appendices comprise the Harvard study on global malnutrition and the feasibility of cereal fortification interventions. The study focuses on 3 cereals: rice, wheat, and maize, and it presents case studies of Guatemala, Tunisia, and Thailand. The first chapter (by J. E. Austin) gives an overview of cereal fortification. The second (by Mohammed el Lozy and S. N. Gershoff) covers nutritional need, the third discusses the commodity system structure (by J. E. Austin), and the fourth (by Yong, S. H.) describes fortification technology. Consumer acceptability (by Gail Harrision) and economic aspects (by D. R. Snodgrass) are covered in chapters 5 and 6. Case studies on Guatemala (by J. J. Urrutia, Charles Teller, V. M. Pivaral, Bertha Garcia, Marina Flores, E. T. Kennedy, Carlos Sequiera, and J. E. Austin), on Tunisia (by Christopher Mock), and on Thailand (by Delane Welsh, Sopin Tongpan, Christopher Mock, E. T. Kennedy, and J. E. Austin) are described in chapters 7, 8, and 9.
