Abstract
The objective of this report is to bring together existing technical and commerical information from all available sources and present it in practical terms so that it will be of immediate value to the catfish industry. The longest chapter of this report is on "the state of the art of catfish processing" and discusses processing facilities; water disposal; personnel; ice hauling of catfish; cleaning, skinning and sizing of fish; labeling and handling practice; microbiological standards; storage and marketing. Other chapters cover the processing industry, processing economics, economic utilization of processing waste, the off-flavor problem in farm-raised catfish, commercially smoked catfish processing and marketing and finally, there is a list of available literature on the subject.
