Project to help CARITAS add a comprehensive nutrition/health education component to its P.L.

Abstract
480, Title II maternal/child health (MCH) program in El Salvador. The project, to be implemented by the CARITAS National Office, will focus on developing a cadre of community-level, volunteer nutrition and health educators. The project will be implemented in four phases. First, the national head of the MCH program will be assisted in developing a curriculum and an evaluation design for the training of CARITAS educators at the national, regional, volunteer, and community levels. Next, three national supervisors will be trained overseas in extension methods and in a specific educational methodology model for low literacy populations. This methodology will be integrated with the previously developed course packages, and national-level personnel will train five nutrition education trainers, the five regional CARITAS P.L. 480 supervisors, and 10-20 educators who are part of CARITAS" regular regional staff. In the project"s final phase, the nutrition education trainers will train a total of 1,280 volunteers, four from each of CARITAS"s 320 food distribution centers. Training will involve a monthly 10-course series and follow-up training at the community level in delivery of nutrition/health education materials to MCH participants and in the use of nutritional screening and other methods in feeding programs.
