Abstract
Through the Programa para Afrodescendientes e Indígenas de USAID, FUNLEO conducted six "Laboratorios de Gastronomía" in various ethnic communities across four departments in Colombia. The initiative aimed to showcase the local cuisine, promote the use of local ingredients, and preserve the cultural heritage of these communities. The project focused on the production, preparation, and consumption of traditional foods, highlighting the importance of these practices in the cultural identity of the communities. The Laboratorios de Gastronomía brought together local chefs, farmers, and community members to develop new recipes and cooking techniques that incorporated local ingredients and traditional methods. The project resulted in the creation of over 50 new recipes that showcased the rich gastronomic and cultural heritage of these communities. The Laboratorios de Gastronomía were conducted in six different locations, each with its unique cultural and culinary traditions. The communities involved included the Afro-Colombian communities of La Toma, Cuenca del río Yurumanguí, La Plata, and San Basilio de Palenque, as well as the indigenous community of Resguardo indígena de Ambaló. The project aimed to promote the use of local ingredients, preserve traditional cooking methods, and showcase the cultural heritage of these communities. The project was a collaborative effort between FUNLEO, USAID, and ACDI/VOCA, with the support of the Banco de Bogotá.
