Abstract
The Federation Nationale des Groupements Interprofessionnels de la Filiere Betail Viande du Niger (FNGI-BV) has developed a guide for training formateurs in bovine slaughter and meat production. The guide is intended to provide a comprehensive methodology for conducting technical operations and producing high-quality meat. It is designed to be a necessary tool for all operators in the slaughter and meat production sector. The creation of a slaughterhouse for bovines intended for high-quality meat production requires specific steps to initiate activities. To succeed, the operator must take the time to ask pertinent questions about the feasibility of their project. The guide reviews all the necessary steps to conduct and succeed in a slaughter operation. It will serve not only to pilot the slaughterhouse during the first year of operation but also to train other producers on the conduct of this activity. The guide is intended for formateurs in slaughter, promoters of the slaughter activity, butchers, and farmers. It covers the following topics: The different forms of slaughter, including extensive, semi-intensive, and intensive methods. The guide highlights the importance of choosing the right method for Niger. The nutritional needs of animals for slaughter, including theoretical and practical examples of rations. Factors influencing the performance and economic viability of animals for slaughter, including factors related to the mastery of the slaughter practice and external dynamics. The main races of meat-producing cattle in Niger, including their characteristics and importance in the livestock and meat production sector. The quality of meat and its importance in the livestock and meat production sector, including the need to strengthen consumer confidence in the sector and the importance of implementing risk analysis programs throughout the sector. Precautions for the success of a slaughter operation, including sanitary precautions and the importance of proper management and organization. The economic and financial viability of a slaughter operation, including key indicators of economic viability and financial evaluation. An exercise demonstrating the calculation of the benefits of a bovine slaughter operation, including investment, personnel and transportation costs, depreciation costs, and revenue.
